Ottolenghi’s Maple Nut Granola

OTTOLENGHI’S MAPLE NUT GRANOLA

A fantastic go-to granola recipe from the London chef and restauranteur Yotam Ottolenghi. This is a crunchy, not too sweet granola with super deep flavor.

Ingredients

  • 2 cups (260g) mix of nuts and seeds (almonds, cashews, walnuts, hazelnuts, pumpkin seeds, sesame seeds..whatever you like)

  • 3 cups (300g) rolled oats

  • 1/4 tsp salt

  • 3 tbsp water

  • 4 tbsp coconut oil or vegetable oil

  • 1 cup (240ml) maple syrup

Directions

  1. Preheat oven to 275 F. Coarsely chop nuts and seeds and combine with oats in a bowl

  2. Combine all the ingredients for the syrup and add to bowl of nuts and oats. Mix well.

  3. Line a baking sheet with parchment. Spread the granola mixture evenly.

  4. Bake for roughly 40 mins turning it at the halfway point. Bake until a dark, maple syrup color. Don’t worry if it seems soft at this point. It will turn crunchy after leaving it to cool.
