Roasted Sweet Potatoes with Goat’s Cheese & Chickpeas

I love finding new ways to eat vegetables and this sweet potato rocks my world. It works as a great side dish or perfect for a main for vegetarians. The depth of flavor and textures are phenomenal and it blows me away how easy this is to make.
Ingredients
2 medium sweet potatoes washed and cut in half
15 oz can garbanzo beans (chickpeas) drained and rinsed
large handful of chopped cilantro
lemon zest
goat or feta cheese
olive oil
salt and pepper
Directions
Preheat oven to 375F. Drizzle some olive oil on a sheet pan with parchment and place sweet potatoes cut side down. Bake for 30-40 minutes until soft.
Arrange sweet potatoes with a few handfuls of garbanzo beans, some feta or goats cheese and top with chopped cilantro, lemon zest and drizzle of olive oil. Top with salt and pepper.
