Roasted Sweet Potatoes with Goat’s Cheese & Chickpeas

serves 2-4

I love finding new ways to eat vegetables and this sweet potato rocks my world. It works as a great side dish or perfect for a main for vegetarians. The depth of flavor and textures are phenomenal and it blows me away how easy this is to make.

Ingredients

  • 2 medium sweet potatoes washed and cut in half

  • 15 oz can garbanzo beans (chickpeas) drained and rinsed

  • large handful of chopped cilantro

  • lemon zest

  • goat or feta cheese

  • olive oil

  • salt and pepper

Directions

  1. Preheat oven to 375F. Drizzle some olive oil on a sheet pan with parchment and place sweet potatoes cut side down. Bake for 30-40 minutes until soft.

  2. Arrange sweet potatoes with a few handfuls of garbanzo beans, some feta or goats cheese and top with chopped cilantro, lemon zest and drizzle of olive oil. Top with salt and pepper.
