Berry Mascarpone Magic

This dessert started when I came across a pack of Vanilla Butter Crunch Super Crunchy Cookies from the NYC famed Milk Bar at my Whole Foods. Since Milk Bar hit home runs with all their products I figured I would pick up a bag and come up with a simple dessert for when we have friends over. If you can’t find those cookies at Whole Foods you can order them here

Ingredients

  • 10-11 strawberries

  • 1 1/2 cups of blackberries

  • 4 tablespoons sugar

  • Optional - splash of balsamic 

  • 1 cup mascarpone

  • 2 tsp vanilla or 2 vanilla bean of seeds

  • 1/2 cup heavy cream

  • 1/2 cup kefir

  • 2 tablespoons powdered sugar

    Topping

  • Handful of Vanilla Butter Crunch Super Crunchy Cookies for each bowl.

Directions

  1. Slice the strawberries and mix together with the blackberries, the 4 tablespoons of sugar and a splash of balsamic vinegar (if using). Let the mixture sit for 30-45 minutes until the berries are nice and juicy.

  2. In a medium bowl, combine the mascarpone, vanilla extract (or vanilla bean seeds), heavy cream, kefir, and powdered sugar. Whisk until the mixture is smooth and slightly thickened.

  3. Divide the mascarpone cream mixture into serving bowls. Top with the macerated berries. Sprinkle the crumbled Vanilla Butter Crunch Super Crunchy Cookies over the top for added texture and flavor. Serve immediately or chill in the refrigerator for a few minutes before serving for a cooler dessert.
